
Corica Pastries’ Apple Strudel: what makes it so good?
August 20, 2025Our world-famous Apple Strudel was first introduced to Perth in 1957 by Sicilian patissier Giuseppe Corica. Since then, people have been travelling from all over Perth and the world for the dessert. Many of these celebrate significant events, such as christenings, engagements, birthdays and weddings with the famous Apple Strudel.

From Sicily to Perth — Corica Pastries’ Apple Strudel’s Origins
Hailing from Sicily, the Corica family originally opened one bakery in the city upon migrating to Australia. The family felt there was a shortage of Italian Desserts, and from that need, established a bakery to produce their Apple Strudel and various other pastries. All of Corica’s pastries hail from traditional European recipes and delights as a whole.
Since the family started baking in Perth, the bakery has been in the city, before moving to our Aberdeen Street Store and Bakery in Northbridge. Since its establishment, the Strudel became an instant hit and began laying the foundations of the legacy that Corica would leave behind.
Our Aberdeen street store has remained the heart of our operations and customer storefront ever since, whilst our Strudel has remained more popular than ever.
The development of the Corica Pastries you know today
When some of the Corica Family passed in the 1990s, their affiliates and other family members continued to run the bakery, passing down the recipes to bakers and staff. Eventually, they sold the business to the Bovell family, including the original recipes and authentic Corica taste that remains today. The Bovell family is still in charge of the store today, and has continued to use the original strudel recipe and a variety of other recipes Corica was known for. The family has also added several new products to the bakery to align with its continually growing audience.
A worldwide Success
Whilst Corica is a household name & tradition amongst Perth’s Italian and Greek communities, by the 2000s, Corica Pastries soon gained a new and unexpected fan base – South-East Asian visitors and expatriates.
Even today, people still travel from all over the world to taste Corica’s Apple Strudel. Aware of that success and to enable visitors to bring home a taste of Corica’s famous Apple Strudel, Corica has created a specific packaging for travelling with the strudel. This packaging has been designed to ensure the safe transportation of the Strudel, so it can be taken across the world and shared everywhere around the globe.
The recipe that pleases the crowd
Corica’s Strudel slightly differs from traditional Apple Strudel, being a recipe from Italy where the Strudels are made using fresh and individually cooked ingredients rather than being baked as a whole. Our recipe also puts custard and cream inside the pastry for more flavours, whilst they would more traditionally be used as accompaniments.
Corica’s Apple Strudel starts with layers of flaky, buttery puff pastry, which offers a satisfying crunch to contrast with its sweet and soft fillings. This pastry is then filled with handmade in-house custard and followed by a layer of freshly baked apples. To then finish off the first layer, whipped cream is piped in delicate ribbons to bring together all the decadent flavours. This process is then repeated to create a second layer, which is topped off with a final glossy shell of puff pastry.
Corica also has the just as popular Blueberry & Apple Strudel, which features the same pastry, custard and cream but with a delicious blueberry and apple compote instead. The Blueberry Strudel is perfect for those who wish to try a new variation or prefer a slightly tart flavour profile. At Corica Pastries, we have two sizes available of both flavours— the original full-sized, perfect for a group, and the smaller half serve, perfect for two people.
